Our Beginning
St Winifred’s Winery was established in 2005 in the picturesque valley between Mt Strathbogie and Mt Samaria, on the banks of Lake Nillahcootie. From the start, the winery was a family endeavour. Everyone was involved including vineyard manager Peter, winemaker Cait, and their children, Jimmy, Sally and Lucy, doing everything from planting vines to picking (and in the early days foot stomping) grapes and bottling wine.
Our aim
The goal has always been to produce the best quality wine using traditional methods. Since graduating with a Diploma of Wine Technology from Melbourne University’s Dookie campus, Cait has continued to develop her skills. Every batch of wine is nurtured from the moment it is hand picked to the time it is hand bottled. The grapes have extended cold maceration to extract maximum flavour and allowed time to age before bottling.
Although we are not completely organic, we produce our grapes and wine with minimal chemical use. We like the grapes to speak for themselves and use only the highest quality produce to create our range of wines.
Our business
Our wine is available for purchase only from local farmers markets, produce stores and now through the Mansfield Producers group. It has always been our aim to produce a unique, locally sourced and distributed product.
